Nickie Mydung

Behind CHIBA is Danish-Vietnamese Nickie Mydung. The name CHIBA is Mydung´sVietnamese nickname, the one her family used for her growing up on Funen. She is a self-taught chef, entrepreneur, food expert, and businesswoman.

Nickie Mydung previously created the street food concept District Tonkin, which from 2013 onward made Copenhageners addicted to spicy Bánh Mì, noodle salads, and the distinctive taste of Asian sauces. She has from the outset been the key arbiter of taste in the kitchen and has travelled throughout Asia searching for the best ingredients, preparations, and flavorycombinations.

At CHIBA, you can experience fine dining with an Indochinese foundation. Nickie Mydung has just opened the sister restaurant BAR MEIMEI, where the flavours of CHIBA are reflected in a more casual and takeaway-friendly concept.
